Hummus is one of my favourite foods on earth.
Thats why I can’t believe how I managed to have a food blog without a hummus recipe…! I have to get organised at some point in my life…
Anyway! This libanese dish is brilliant stuff. Chickpeas puréed into a spicy lemony flavoured spread so that you can enjoy it in pitas, tortillas, sandwiches, on the go, anywhere! And OH, MY, GOD. So delicious, it should be bad for us. But you see, it’s not! It’s a high protein, high fiber food that contains phytonutrients, potassium, magnesium, basically it doesn’t just feed you, IT NOURISHES YOU!
Now when you start hacking this baby, a whole new world of endless possibilities is right there in front of you. My suggestion is this red pepper flavoured hummus that kicks you even more with its full unforgettable taste.
Ingredients:
750 grams boiled chickpeas
juice of two big lemons
2-3 tbsp whole tahini
1/4 cup olive oil
1/4 cup water
1 red bell pepper roasted
1 garlic glove
1 tsp paprika
1 tsp cumin
1 tsp Himalayan salt
ground pepper
Directions:
Put everything in your food processor and blend until creamy, or desired consistency.
If it’s too thick you can add some water from the boiled chickpeas or extra lemon juice. I like it chunky!
